SUMMER PLUM TOMATOES THAT BURST WITH FLAVOR AND ARE AS EASY AS 1, 2, 3


 

INGREDIENTS:

- 6 (or more) nice ripe plum tomatoes each sliced crosswise into 3 rounds

- olive oil

- 2 or 3 garlic cloves , minced

- salt & pepper to taste

- fresh and dried basil


PREPARATION:

1. LINE A BAKING SHEET WITH A “SILPAT” OR PARCHMENT PAPER AND BRUSH WITH OLIVE OIL. 2.  PLACE TOMATOES ON TOP AND SEASON WITH SALT, PEPPER AND A LITTLE DRIED BASIL. 3. ROAST IN 450 OVEN FOR 15-20 MINUTES UNTIL TOMATOES HAVE SOFTENED BUT NOT FALLEN APART. GARISH WITH FRESH BASIL. DRIZZLE A BIT OF OLIVE OIL IF YOU’D LIKE.


You can serve the tomatoes in several ways.... simply enjoy as is, or slice some fresh mozzarella and place a tomato and fresh basil on each slice, or toast some nice crusty baguette slices and add the tomatoes on top..... or use your kitchen imagination to create your very own SUMMER TOMATO  recipe.
